Chocolate & Marshmallow Galore Cake (EASY!)

Okay Biffles, I am going to be 100% honest here so NO judging…

As much as I love baking my cakes from scratch, this one came straight out of a box. Oye! I feel ashamed telling you but the truth is sometimes life gets crazy and we just need to sacrifice the scratch for the box… am I right? 

Now, if you know your oven (for example if it runs hot)  then you can create a pretty delicious from-the-box cake and no one will know the difference. With a few additional ingredients, you can easily turn box into beauty.

What I used: 

  • Chocolate Cake Box Mix PLUS all the ingredients the box called for

  • 1 Jar of Marshmallow Fluff - Jet Puffed

  • Grahm Crackers 

  • Chocolate Chips 

And the steps I took:

1. Prepare chocolate cake as the box instructs however, use two 6in round cake pans for baking. 

2. Let your cake cool COMPLETELY. This is so, so important so that is doesn’t melt your Marshmallow Fluff. 

*The best advice I can give you is wait until the last possible minute to begin applying your Marshmallow Fluff. It’s texture and consistency is so much different than frosting and will begin to soak into the cake as time passes. 

3. Place one of your cakes down as your first layer and spread about 1/3 of your Marshmallow Fluff for your middle layer. Allow it to drip over the sides. 

5. Sprinkle a handful (or more) of chocolate chips on top of the fluff.  

4. Place your second cake layer on top of your Marshmallow Fluff layer and pour out the remaining Fluff on top. 

5. Lightly push your Marshmallow Fluff to the ends and allow it to drip over the sides of the cake on its own. 

6. Crush up your preferred amount of graham crackers and sprinkle over the top. 

7. Lastly, sprinkle a handful of chocolate chips (or more) on top. 

Ta-da! That’s it. Seriously, so easy. This is also a great cake recipe for those of you who aren’t a huge fan of frosting. The Marshmallow Fluff lightens up the cake quite a bit and the graham crackers give it a nice crunch.
